Borstplaat

Ingredients

1 cup sugar
3 tablesps. of either water, milk or light cream

1 teasp. butter

a few drops of any kind of extract e.g. almond, strawberries etc.

a few drops of food colouring

 

Method:

For Fruity Borstplaat

1) In a small, heavy sauce pan stir sugar and liquid until it forms a paste

2) Heat slowly to boiling and cook on low heat without stirring until syrup spins a thread ( or candy thermometer registers 240 degr.)

3) Remove immediately from heat , add butter and a few drops of fruit extract and a few drops of matching food colouring

4) Stir long and vigorously until mixture thickens and begins to make a scratchy sound

5) Drop from the tip of a spoon onto waxed paper or pour into a greased container, about 1/3 inch high

6) Let it cool until it gets solid

Variations:

Coffee Borstplaat :

Follow same recipe as above, but use 1 1/2 tabls. cream and 1 1/2 tablesps. strong coffee ( no other flavouring needed)

Chocolate Borstplaat

Add 2 tablesps. of cocoa to the sugar, mix with 3 tablsps. cream and stir to eliminate lumps before heating.

Speculaas

Ingredients:

200 grammes cake flour ( this has baking powder in it already)
75 gr margarine

100 gr ( 1 cup ) brown sugar

2 teasps - 1 tablesp allspice

a pinch of salt

1 tablesp. milk

about 100 grammes almonds or peanuts, shredded

 

 

Method:

1) Mix cakeflour with margarine, brown sugar, salt, and allspice until smooth

2) Rest dough for about 10 mins.

3) Roll out dough on a floured surface ( to about 1/4 inch thickness )

4) Sprinkle almond or peanut chips over dough and press them lightly into the dough with the palm of your hand

5) Cut shapes out of dough and place on prepared cookie sheet ( or if you have traditional wooden speculaas moulds,press dough into the moulds, then turn over and beat back of wooden moulds until dough drops onto prepared cookie sheet)

6) Bake in 300 degr. F oven for about 20 - 25 mins.

Letterbanket- Kerstkrans

Ingredients:

For puff pastry:

1/2 cup ( 1 stick ) butter
1 cup sifted all purpose flour

1/4 cup ( or more ) ice water

a pinch of salt

For almond paste filling:

Or use prepared mazipan

1/4 lb ground almonds
1/2 cup sugar

1 egg

a pinch of salt

grated peel of one lemon

1 egg for brushing dough with

Method:

1) Make puff pastry dough following basic cookbook directions or by frozen and defrost

2) Prepare almond paste filling: mix ground almonds with sugar,beaten egg, grated peel and salt

3) Roll paste into a sausage, about 1" in diameter, wrap in wax paper and chill

4) Roll out dough to strip about 3 1/2 " wide and 1/8" thick

5) Place almond mixture sausage along centre of rolled out dough and wrap dough over and seal both ends with water

6) Shape this pastry into the required letter (e.g. the letter "D" ) and place, seam down, on a floured cookie baking sheet

7) Beat egg with a little water and brush top of letter with it

8) Bake 30-35 mins. in 425 degr. oven

9) Cool on rack

For the Christmas wreath shape the filled dough into a ring, sealing ends together. Bake as above, cool and sprinkle with icing sugar an red and green maraschino cherries and leaves cut from green candied citron.

Oliebollen

Ingredients:

2 cups all purpose flour
1 package yeast

3/4 cup lukewarm milk

1 egg

2/3 cups raisins

1 heaping tablesp. mixed candied fruit, chopped

1 tart apple, peeled, cored and minced

grated peel of 1/2 lemon

pinch of salt

 

Method:

1) Soften yeast in water - let stand until bubbles form

2) Combine all ingredients, add yeast

3) let dough rise for one hour

4) Shape into balls with two tablesps. dipped into oil and drop into hot oil ( 365 degr F), a few at a time

5) Fry unril puffed and gol brown on all sides - drain on papaer towels

6) Roll in icing sugar- Serve warm

Sneeuwballen

Ingredients

Cream puff dough - home made or commercially made
icing sugar

sweetened whipped cream

Method:

1) Shape small round cream puffs from the dough and fry in oil until golden - Drain on paper towels

2) With a small sharp knife cut a hole in each puff , insert pastry bag filled with whipped cream into hole and fill each
" snow ball" with whipped cream

3) Roll in icing sugar and serve
